Broiled Scallops over Mashed Parmesan Cauliflower - CE

Ingredients

Prep
  • 2 bunch asparagus
  • 2 lbs sea scallops dry packed for best results
  • 3 T olive oil
  • 1 T Old Bay Seasoning
  • 2 t minced garlic
  • 1 T lemon juice
  • salt and pepper to taste
On Cooking Day
  • 20 oz frozen cauliflower
  • 1 t garlic powder
  • 1/4 C shredded Parmesan cheese
  • salt and pepper to taste
  • 2 T milk if needed

Instructions

To Assemble
  1. Cut woody ends off asparagus and add to large zipper bag.
  2. Add scallops to another zipper bag.
  3. Mix last 4 ingredients in a small bowl and pour most of it over scallops and remaining over asparagus. Zip bags and shake to mix.
To Cook
  1. Pour scallops and asparagus onto baking sheet sprayed with non stick spray.
  2. Broil for 3 - 4 minutes on each side until scallops are browned.
  3. Prepare cauliflower according to package directions.
  4. Place cauliflower in bowl and mash along with next 4 ingredients.
