Ingredients
Prep
- 1 orange bell pepper
- 1 red bell pepper
- 2 zucchini
- 1 yellow squash
- 6 pork chops
- 1 C BBQ sauce
On Cooking Day
- 1 C quinoa
- salt and pepper to taste
Instructions
To Assemble
- Chop bell peppers, zucchini and squash into 3 inch strips and add to large zipper bag.
- Add pork chops to another large zipper bag and pour 1/2 bbq sauce on pork and 1/2 on vegetables. Zip bags and shake to mix.
To Cook
- Pour pork chops and vegetables onto large baking sheet (2 baking sheets may be needed to fit everything). Pork may also be grilled.
- Bake 425 degrees for 20-28 minutes or until pork is cooked through.
- Cook quinoa according to package directions.
