BBQ Pork Chops with Rainbow Veggies – CE

Ingredients

Prep
  • 1 orange bell pepper
  • 1 red bell pepper
  • 2 zucchini
  • 1 yellow squash
  • 6 pork chops
  • 1 C BBQ sauce
On Cooking Day
  • 1 C quinoa
  • salt and pepper to taste

Instructions

To Assemble
  1. Chop bell peppers, zucchini and squash into 3 inch strips and add to large zipper bag.
  2. Add pork chops to another large zipper bag and pour 1/2 bbq sauce on pork and 1/2 on vegetables. Zip bags and shake to mix.
To Cook
  1. Pour pork chops and vegetables onto large baking sheet (2 baking sheets may be needed to fit everything). Pork may also be grilled.
  2. Bake 425 degrees for 20-28 minutes or until pork is cooked through.
  3. Cook quinoa according to package directions.
