Ingredients
Prep
- 1 C frozen chopped onion
- 3 T minced garlic
- 1 C ketchup
- 1/3 C brown sugar
- 2 T white vinegar
- 2 T yellow mustard
- 2 T Dijon mustard
- 1 T Worcestershire sauce
- 1/4 C pineapple juice
- 2 t Cajun seasoning
- 6 boneless chicken breast
- 30 oz canned pinto beans
- 15 oz canned great northern beans
On Cooking Day
- 8 C salad greens
Instructions
To Assemble
- Mix first 10 ingredients in a small bowl. This will be the sauce.
- Add chicken to large zipper bag.
- Rinse and drain beans and add to another large zipper bag.
- Pour 2-3 tablespoons of the sauce over the chicken. Zip and shake to mix. Pour remaining sauce over beans. Zip and shake to mix.
To Cook
- Pour bean mixture into slow cooker and cook on low for 6 hours or in the Instant Pot for 15 minutes.
- Grill chicken on indoor or outdoor grill.
- Serve with green salad.
