Baked Shrimp Scampi - C
Broccoli and garlic bread

Ingredients

Prep
  • 2 lbs large peeled shrimp raw
  • 2 T olive oil
  • salt and pepper to taste
  • 3/4 C butter softened
  • 4 t minced garlic
  • 1 T dried parsley flakes
  • 1/4 t crushed red pepper flakes
  • 2 T lemon juice
  • 1 egg yolk
  • 2/3 C whole wheat Panko bread crumbs
On Cooking Day
  • 16 oz fresh broccoli
  • 1 pkg garlic bread

Instructions

To Assemble
  1. Spray a baking dish with non stick spray.
  2. Place shrimp and next 2 ingredients in baking dish. Toss to mix.
  3. Mix next 6 ingredients in a medium bowl. Use a fork if needed to blend well, then dab evenly over shrimp.
  4. Sprinkle with bread crumbs.
  5. Cover with foil.
To Cook
  1. Bake uncovered in a 425 degree oven for 12 - 15 minutes or until shrimp are cooked through.
  2. Steam broccoli until crisp-tender.
  3. Cook bread according to package directions.

*Non seafood eaters, substitute with cubed chicken or steak.  May take longer cook time.
