Baked Blueberry Pancakes

Ingredients

Prep
  • 2 C pancake mix
  • 1 1/2 C milk
  • 1 eggs
  • 1 T butter melted
  • 1 t ground cinnamon
  • 1 C blueberries fresh
On Cooking Day
  • 1/2 C maple syrup
  • 3 T butter

Instructions

To Assemble
  1. In a large bowl, combine the pancake mix, milk, egg, butter and cinnamon just until blended (batter will be lumpy). Fold in blueberries.
  2. Spread into a large greased sheet pan and cover.
To Cook
  1. Bake at 400° for 12-15 minutes (uncovered) or until golden brown.
  2. Serve with butter and syrup.
