Bacon Egg Hash Bake

Ingredients

Prep
  • 20 oz cubed frozen hash browns
  • salt and pepper to taste
  • 2 T olive oil
  • 2 C shredded Mexican cheese
On Cooking Day
  • 6 eggs
  • 1/2 C real bacon bits
  • 3 chopped green onion

Instructions

To Assemble
  1. Layer ingredients in greased casserole dish. Cover with lid.
To Cook
  1. Bake at 400 degrees for 30 minutes.
  2. Take out of oven. Add in bacon, then crack eggs into casserole dish (spread evenly across). Sprinkle with green onion.
  3. Add back to oven and bake for another 10 minutes, or until egg whites are set.
