Asparagus Pizzas - CE
Green salad and tomato wedges

Ingredients

Prep
  • 1 bunch asparagus
  • 1 T olive oil
  • salt and pepper to taste
  • 2 t minced garlic
  • 1/2 C ricotta cheese
  • 2 oz goat cheese or mozzarella cheese
  • 2 whole wheat pizza crusts
  • 4 tomato
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Cut woody ends off asparagus and discard. Chop asparagus spears into 1 inch pieces. If stalks are thicker than a pencil, cut in half lengthwise.
  2. Toss asparagus in large bowl with olive oil, salt, pepper and garlic.
  3. Mix ricotta and goat cheese (or mozzarella) in small bowl and spread over each pizza crust.
  4. Top with asparagus. Place on baking sheets and cover with foil or store in bags that came with pizza crusts.
  5. DO NOT discard pizza crust package. Keep for cooking directions.
  6. Wedge tomatoes and store in small bowl with lid.
To Cook
  1. Place pizzas on baking sheet and cook in 400 degree oven for 8 - 12 minutes depending on the pizza crust package directions.
  2. Serve with green salad and tomatoes.
