Pot pie style BBQ Beef with Cornbread dinner in ONE POT!! Grab a cornbread mix or make your own. I used a gluten free mix this time.
Toss all ingredients in the slow cooker then spread the cornbread mix over top. Add some butter because butter makes everything better.
Trust me here. I know it is hard. The cornbread will not be mushy. I repeat, the cornbread will not be mushy. Trust me. All my recipes are tested over and over and I wouldn’t have you serving a bowl of mush to your family. It will puff up slightly and cook just like it does in the oven.
Look at all that yumminess that came out of one pot! Cooking doesn’t have to be hard or use up every pot and pan in your kitchen.

Ingredients
- 2 lbs stew meat
- 1 C frozen peppers and onions
- 12 oz frozen corn
- 1 C BBQ sauce
- 14 oz can diced tomatoes
- 16 oz cornbread mix
- 1 egg
- 2/3 C milk
- 6 C salad greens
Instructions
- Mix first 5 ingredients in large zipper bag. Zip to seal and squish around to mix.
- Mix last 3 ingredients in medium bowl. **All cornbread mixes vary, please follow directions on package. Cover and store until ready to cook.
- Pour meat mixture into slow cooker.
- Pour cornbread batter over meat.
- Cook on low 6 hours.
- Serve with green salad.
