Easy Roasted Shrimp and Broccoli
Ingredients
Prep
- 2 lbs broccoli fresh
- 2 T olive oil
- 1 t ground cumin
- 1 t chili powder
- salt and pepper to taste
- 2 lbs large peeled shrimp (tail on, it adds flavor)
- 2 T olive oil
- salt and pepper to taste
On Cooking Day
- 2 bag frozen brown rice steamer
- 1 lemon
Instructions
To Assemble
- Chop broccoli into florets (a little larger than bite size) and add to large zipper bag.
- Add next 5 ingredients to broccoli. Zip to seal and squish around to mix.
- Add shrimp and olive oil to another large zipper bag. Salt and pepper to taste. Zip to seal and squish around to mix.
To Cook
- Add broccoli to large baking sheet sprayed with non stick spray and roast in a 425 degree oven for 30 minutes.
- Add shrimp to another large baking sheet sprayed with non stick spray and roast in oven last 8 - 10 minutes. (last 10 minutes of broccoli cook time on the 2nd oven rack)
- Cook rice according to package directions.
- Serve with lemon wedges.
