Sweet & Sour Chicken - CE

Ingredients

Prep
  • 6 chicken breasts
  • 2 bell peppers any color
  • 20 oz broccoli florets
  • 10 oz can crushed pineapple
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1 t crushed red pepper flakes optional
  • salt and pepper to taste
On Cooking Day
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Cut chicken and bell pepper into 1 inch pieces and add to large zipper bag along with broccoli.
  2. Mix next 5 ingredients (including juice from pineapple can) in a small bowl and mix well. Pour half over chicken mixture and reserve remaining half for cook day.
To Cook
  1. Scoop chicken & broccoli with slotted spoon into large baking sheet sprayed with non stick spray. Discard liquid marinade.
  2. Bake 400 at degrees for 20 minutes or until chicken is cooked through.
  3. Simmer reserved marinade over medium heat for 5-7 minutes. Serve as desired.
  4. Cook rice according to package directions.
