Sweet and Sour Pork - C

Ingredients

Prep
  • 1 1/2 lb pork loin or tenderloin
  • 1/3 C cornstarch
  • 3 T ketchup
  • 4 T apple cider vinegar
  • 3 T soy sauce
  • 4 T brown sugar
  • 1 T cornstarch
  • 1 red bell pepper
On Cooking Day
  • 3 chopped green onion
  • 12 oz can pineapple chunks
  • 2 bag frozen rice steamers

Instructions

To Assemble
  1. Cut pork tenderloin into thin slices. Coat with cornstarch in large zipper bag. Zip to seal and squish around to mix.
  2. Add next 5 ingredients to small bowl with lid.
  3. Cut bell pepper into slices and store in separate container.
To Cook
  1. Add pork, bell pepper, and pineapple to sheet pan. Spray pork with non-stick spray to help it crisp up. Bake at 400 degrees for 15-20 minutes. Add sauce to pork during last 5 minutes of baking. Garnish with green onion.
  2. Cook rice according to package directions and serve with pork.
