Spinach Ricotta Stuffed Peppers - CE
Rice and cherry tomatoes

Ingredients

Prep
  • 10 oz frozen chopped spinach
  • 3 bell peppers any color
  • 24 oz ricotta cheese
  • 1/2 C frozen chopped onions
  • 1 C shredded Parmesan cheese
  • 2 T minced garlic
  • 1 t dried basil
  • salt and pepper to taste
  • 1 pint cherry tomatoes
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 1/2 C shredded Parmesan cheese

Instructions

To Assemble
  1. Thaw spinach and drain well. Squeeze out any excess water then add to large bowl.
  2. Cut peppers in half and discard seeds.
  3. Mix next 6 ingredients with spinach and scoop evenly into pepper halves.
  4. Place peppers in a 9x13 baking dish sprayed with non stick spray. Sprinkle tomatoes around peppers. Cover with foil.
To Cook
  1. Uncover and bake peppers in 425 degree oven for 30-40 minutes. Top with remaining parmesan cheese before serving.
  2. Cook rice according to package directions.

*add 4 Italian sausage links to pan if a heartier meal is desired.
