Ingredients

Prep
  • 1 T dried onion flakes
  • 8 eggs
  • 1 C milk
  • 1/2 C biscuit mix
  • salt and pepper to taste
  • 1 C frozen spinach thawed
  • 4 oz real bacon bits
  • 1 C shredded Swiss cheese
  • 2 frozen pie crusts
  • 16 oz fresh strawberries whole or sliced
On Cooking Day
  • none needed

Instructions

To Assemble
  1. Put the first 5 ingredients in a blender and mix. Add spinach and pulse twice. Cover pitcher and store in the refrigerator.
  2. Add cheese and bacon bits to pie crusts and cover with plastic wrap. Store pie crusts in refrigerator to allow thawing.
  3. If desired, slice strawberries and store in a medium container with a lid.
To Cook
  1. Pour egg mixture into pie crusts. Bake at 375 for 40 minutes, or until eggs are set.
  2. Serve with fresh strawberries.
