Grape tomatoes and green salad

Ingredients

Prep
  • 5 oz frozen chopped spinach thawed
  • 2 C baking mix bisquick or Pamela’s
  • 3 egg
  • 1/2 C milk
  • 1 1/2 C low fat cottage or ricotta cheese
  • 1 C shredded mozzarella cheese
  • 1/2 C grated Parmesan cheese
  • 1 t onion powder
  • 1 t minced garlic
On Cooking Day
  • 6 C salad greens
  • 1 pint grapes tomatoes

Instructions

To Assemble
  1. Thaw and drain spinach (and squeeze dry).
  2. Mix spinach with all ingredients in a large bowl then pour into a large baking dish sprayed with non stick spray. Cover with foil.
To Cook
  1. Uncover and bake in a 350 degree oven for 40 - 45 minutes or until center is set.
  2. Serve with green salad and grape tomatoes.
