Southwest Egg Bake - Anniversary

Ingredients

Prep
  • cooking spray
  • 8 corn tortillas
  • 12 eggs
  • 1/2 C half & half
  • 11 oz can Mexicorn drained
  • 2 C shredded cheddar cheese
  • 1 watermelon or honeydew
On Cooking Day
  • 1 C salsa
  • 1/2 C sour cream

Instructions

To Assemble
  1. Spray a casserole dish with cooking spray and lay tortillas on the bottom of the dish.
  2. Add the next 4 ingredients to a large bowl and stir until blended. Pour the egg mixture over the tortillas, and cover with plastic wrap.
  3. Cut melon into slices and store in a large zipper bag.
To Cook
  1. Remove plastic wrap and cover the casserole dish with foil. Bake at 375 for 30-35 minutes or until eggs are set.
  2. Serve with salsa, sour cream, and melon.
