- 1 1/2 C frozen peas thawed
- 1 1/2 C basil pesto
- salt and pepper to taste
On Cooking Day
- 6 C quinoa
- 6 C fresh spinach
- 1/4 C shredded Parmesan cheese optional
- 6 whole wheat dinner rolls
Instructions
To Assemble
- Add the first 3 ingredients in a bowl with a lid. Stir to combine and cover with lid.
To Cook
- Prepare quinoa per package instructions.
- Roughly chop spinach and add to a large bowl with the pea mixture. Add prepared quinoa to the vegetables and stir to combine.
- Garnish with Parmesan cheese as desired, and serve with whole wheat dinner rolls.

Ingredients
- 1 pork spareribs a rack or two
- 1 bottle BBQ sauce
- 1/2 tsp salt
- 1 tsp pepper
Instructions
- Cut ribs rack in half to fit into slow cooker. Place half rack in slow cooker. Layer with sauce, repeat.
- Cook on low for 5-6 hours.
- Serve with more sauce if desired.
