Slow Cooked Sweet Potato Split Pea Soup - CE

Ingredients

Prep
  • 1 1/2 C green split peas rinsed
  • 2 medium sweet potatoes
  • 1 C celery
  • 2 C frozen chopped carrots
  • 1 C frozen chopped onions
  • 3 T minced garlic
  • 2 bay leaves
  • 1 T chopped parsley
  • salt and pepper to taste
On Cooking Day
  • 6 C vegetable broth
  • 1 lime
  • 1 french bread loaf
  • 2 T fresh chopped parsley

Instructions

To Assemble
  1. Rinse the peas and place them in a large zipper bag.
  2. Peel and dice the sweet potatoes and add them to the same bag.
  3. Dice the celery and add it to the same bag along with the next 6 ingredients.
To Cook
  1. Place the prepped ingredients and vegetable broth into the slow cooker and cook on low for 8 hours (or high for 4 hours).
  2. Garnish with lime wedges and chopped parsley.
  3. Serve with sliced french bread.
