Slow Cooked Spinach Stuffed Baked Potatoes - CE

Ingredients

Prep
  • 10 oz frozen chopped spinach
  • 2 t onion powder
  • 2 T minced garlic
  • 1 t dried oregano
  • 8 oz cream cheese
  • salt and pepper to taste
  • 8 oz real bacon bits
  • 6 russet potatoes medium/large
On Cooking Day
  • 6 oz feta cheese
  • 10 C salad greens

Instructions

To Assemble
  1. Thaw and drain spinach and add to medium bowl with lid along with next 6 ingredients.
  2. Wrap potatoes in foil.
To Cook
  1. Cook potatoes in slow cooker on low for 8-10 hours.
  2. Pour spinach mixture into skillet and warm until cheese is melted and flavors mix.
  3. Load each potato up with creamy spinach and top with feta cheese.
