Slow Cooked Jambalaya - CE
Green salad and rice

Ingredients

Prep
  • 2 boneless chicken breasts
  • 1 lb smoked sausage
  • 1 bag frozen chopped onions & peppers
  • 2 t oregano
  • 2 t Cajun seasoning
  • 1/2 t dried thyme
On Cooking Day
  • 28 oz can diced tomatoes
  • 1 can chicken broth
  • 1/2 lb large raw peeled shrimp
  • 6 C salad greens
  • 2 bag frozen rice steamer
  • 1 C hot sauce optional

Instructions

To Assemble
  1. Chop chicken and sausage into bite size pieces and add to large zipper bag.
  2. Add next 4 ingredients to chicken mixture. Zip to seal and squish around to mix.
To Cook
  1. Add diced tomatoes and chicken broth along with chicken mixture to slow cooker. Cook on low for 7 hours. Add shrimp last 20 minutes of cook time. Watch closely to not over cook shrimp.
  2. Cook rice according to package directions.
  3. Serve with salad, rice and hot sauce if desired.

*Non-seafood eaters, omit shrimp and use more sausage and chicken breasts.
