Ingredients
Prep
- 1 onion
- 3 lb beef chuck roast
- 2 T Worcestershire sauce
- 1 t garlic powder
- 1/2 t onion powder
- 1/2 t dried thyme
- salt and pepper to taste
- 2 large seedless cucumbers
- 1 red onion small
- 1/2 C sour cream
- 2 T freshly chopped dill
- 1 T white vinegar
- 1 T sugar
On Cooking Day
- 2 C beef broth
- 6 hoagie sub rolls
- 2 T butter
- 1/2 t garlic powder
- 12 slices provolone cheese
- 1 bag frozen french fries
Instructions
To Assemble
- Slice onion and place in a large zipper bag along with next 6 ingredients. Zip to seal and shake to mix.
- Thinly slice cucumber and red onion and add to a large container with a lid along with remaining ingredients, and stir. Refrigerate.
To Cook
- Pour roast mixture and broth into slow cooker and cook on low for 8-10 hours. Last 30 minutes of cook time, thinly slice roast and return to slow cooker.
- Slice rolls and butter inside and sprinkle with garlic powder. Add sliced meat to roll. Top with cheese. Serve with au jus from the slow cooker on the side for dipping.
- Cook french fries according to package directions.
- Serve with Creamy Cucumber Salad.
