Slow Cooked BBQ Beef Baked Potatoes - C

Ingredients

Prep
  • 6 baking potatoes small russet
  • 3 lb beef roast any cut
  • 1 C BBQ sauce
On Cooking Day
  • 1/2 C water
  • 20 oz can baked beans
  • potato toppings (butter, sour cream, cheese, bacon bits)
  • 8 C salad greens
  • 1 C BBQ sauce

Instructions

To Assemble
  1. Wrap each potato in foil and store in refrigerator.
  2. Chop beef into large chunks and add to large zipper bag with BBQ sauce. Zip to seal and squish around to mix. (you want the beef small enough so both beef and potatoes fit in slow cooker at same time)
To Cook
  1. Place beef in slow cooker along with water. Cover with foil and place foil wrapped potatoes on top. Cook on low 8-10 hours.
  2. Shred beef with two forks and serve over potatoes.
  3. Warm beans in microwave and serve with green salad and extra BBQ sauce.
