Simple Slow Cooker Pork Fettuccine - F
Green salad

Ingredients

Prep
  • 1 1/2 lbs pork loin
  • 24 oz canned diced tomatoes
  • 8 oz can tomato sauce
  • 4 t minced garlic
  • 1 C frozen chopped carrots
  • 1 C frozen chopped onion
  • 2 T balsamic vinegar
  • 1 T dried oregano
  • 2 t dried rosemary
  • 2 C whole wheat fettuccine
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. For Instant Pot: cut pork loin in half.
  2. Add first 9 ingredients to large zipper bag and zip to seal.
  3. Break fettuccine into pieces and store (in pantry) in small container with lid.
To Cook
  1. Pour contents of pork bag into slow cooker. Cover and cook low for 8 - 10 hours or until pork is fork tender and vegetables are done.
  2. Turn slow cooker to high and add pasta. Cook 30 minutes or until pasta is al dente.
  3. Instant Pot: Pour contents of pork bag into IP. Pressure cook for 25 minutes. Let natural release for 10 minutes, then quick release. Add pasta to pot and press saute. Cook pasta for 9-10 minutes, or until al dente.
  4. Serve with green salad.
