Shrimp Quesadillas - C
Sliced avocado, chips and salsa

Ingredients

Prep
  • 1 lb medium cooked shrimp peeled & tail off
  • 1 T fajita seasoning
  • 2 C Monterrey Jack cheese
On Cooking Day
  • 2 avocados
  • 1 bag chips
  • 1 jar salsa
  • 1 pkg flour tortillas
  • 1 T canola oil

Instructions

To Assemble
  1. Mix all ingredients in large zipper bag. Zip to seal. Squish around to mix.
To Cook
  1. Scoop mixture evenly onto flour tortillas. Top with another tortilla. Brush with canola oil.
  2. Bake on large baking sheet sprayed with non stick spray in oven at 400 degrees for 15 minutes or grill on indoor grill.
  3. Slice avocado and serve with chips and salsa.

*Non-seafood eaters, substitute cooked cubed chicken for shrimp.
