Salmon and Arugula Sliders - CE
Sweet potato fries

Ingredients

Prep
  • 6 salmon filets
  • 2 T lemon juice
  • 1 T honey
  • 1 T smoked paprika
  • salt and pepper to taste
  • 1/3 C mayonnaise
  • 1 T lemon juice
  • 1/2 t garlic powder
  • salt and pepper to taste
On Cooking Day
  • 1 pkg whole wheat slider buns
  • 16 oz frozen sweet potato fries
  • 2 C arugula

Instructions

To Assemble
  1. Cut salmon filets in half so they are the size of the buns. In a small bowl mix together next 4 ingredients. Brush on salmon.
  2. Place in a large container with a lid. Use wax paper between layers if needed.
  3. In a small container with a lid mix together remaining ingredients. This will be your sauce.
To Cook
  1. Place salmon on baking sheet sprayed with nonstick spray. Bake in a 425° oven for 10 minutes or until fish flakes easily with a fork.
  2. Prepare sweet potato fries according to package directions.
  3. To serve, place salmon on slider buns, top with arugula and spread some of the creamy lemon sauce on top.
  4. Serve sweet potato fries.
