Ingredients

Prep
  • 32 oz sauerkraut canned or fresh
  • 1/2 C frozen chopped onion
  • 4 t dried parsley
  • 2 t caraway seeds
  • 4 C shredded Swiss cheese 1 lb
  • 1 lb corned beef thinly sliced
  • 1 1/3 C thousand island dressing
  • 6 slices rye bread
On Cooking Day
  • 1/4 T butter softened
  • 1 pkg frozen french fries

Instructions

To Assemble
  1. In a large bowl mix the first 4 ingredients. Spread mixture in the bottom of a baking dish sprayed with non stick spray.
  2. Top with half the cheese, half the dressing, and all of the corned beef. Then layer the remaining cheese and dressing. Cover with foil.
  3. Cube bread and place in a zipper bag.
To Cook
  1. Melt butter and pour in bag with bread. Shake to coat all bread. Sprinkle bread over casserole.
  2. Bake uncovered in 375 degree oven for 40 minutes or until heated through and bread cubes are browned.
  3. Cook french fries according to package directions.
