Pinto Bean Quesadillas - C
Corn & green salad

Ingredients

Prep
  • 30 oz canned pinto beans
  • 2 cup shredded pepper jack cheese
  • 3/4 cup salsa
  • 2 T fajita seasoning
On Cooking Day
  • 12 flour tortillas fajita size
  • 8 cup salad greens
  • 16 oz frozen corn

Instructions

To Assemble
  1. Rinse and drain beans in colander then add to large zipper bag.
  2. Add next 3 ingredients. Zip and squish around to mix.
To Cook
  1. Scoop mixture equally onto flour tortillas then top with remaining tortillas.
  2. Place on large baking sheet sprayed with non stick spray. Spray tops of quesadillas with non stick spray or melted butter.
  3. Bake in a 400 degree oven for 15-20 minutes or until crisp and browned.
  4. Cook corn according to package directions. Serve with salad.
