One Pot BBQ Chicken and Bacon Pasta - C

Ingredients

Prep
  • 2 lb boneless chicken breast
  • 2 T real bacon bits
  • 1/2 C frozen chopped onion
  • 1 t minced garlic
  • 1/2 t salt
  • 1/4 t crushed red pepper flakes
On Cooking Day
  • 2 C chicken broth
  • 14 oz canned diced tomatoes
  • 1/2 C milk
  • 1/3 C BBQ sauce
  • 3 C rotini pasta or other short pasta
  • 1 1/2 C shredded mozarella cheese
  • 6 C salad greens

Instructions

To Assemble
  1. Cut chicken into bite size pieces.
  2. Add chicken and remaining ingredients to large zipper bag and shake to mix.
To Cook
  1. Place prepped ingredients into a large pan. Cook until chicken is browned on the outside stirring occasionally.
  2. Add the chicken broth, tomatoes, milk and BBQ sauce. Stir until combined.
  3. Stir in the pasta and bring to simmer over medium-high heat.
  4. Reduce heat to medium-low, stir often until pasta is al dente.
  5. Stir in cheese and serve with salad.
