No Bake Caramel Pecan Cookie Balls - 5
No Bake Caramel Pecan Cookie Balls - 5

Ingredients

  • 34 vanilla wafers
  • 1/4 C chopped pecans divided
  • 4 oz cream cheese softened
  • 1 1/2 T Caramel ice cream topping
  • 1 1/3 C semi-sweet chocolate chips

Instructions

  1. Line a baking sheet with wax paper.
  2. Add vanilla wafers and 2 T pecans to food processor. Pull until the cooker are finely ground.
  3. To a large bowl, add cookie crumbs, cream cheese and caramel sauce and mix well.
  4. Use a small cookie scooper to scoop and roll the dough into balls and place on baking sheet and freeze for 15 minutes.
  5. Microwave the chocolate in 30 second increments until melted. Stir well every 30 seconds.
  6. Use a fork to dip each cookie ball into chocolate then place back onto wax paper and sprinkle with chopped pecans.
  7. Refrigerate 1 hour or until firm. Enjoy!
