Ingredients

Prep
  • 3 slices bread
  • 3 artichoke hearts
  • 6 T sun dried tomatoes
  • 1/4 C baby spinach
  • 1/4 C crumbled goat cheese
  • 8 eggs
  • 3/4 C milk
On Cooking Day
  • none needed

Instructions

To Assemble
  1. Cube bread. Chop artichoke hearts and sun-dried tomatoes.
  2. Add bread, artichoke hearts, sun-dried tomatoes, spinach, and goat cheese to greased muffin tin.
  3. Blend remaining ingredients. Add to separate medium bowl with lid and store until cooking day.
To Cook
  1. Pour egg mixture into muffin tins.
  2. Bake at 350 degrees for 15-20 minutes.
