Ingredients

Prep
  • 1 1/2 lb pork tenderloin
  • 2 sweet potatoes
  • 1/2 red onion
  • 1/4 C maple syrup
  • salt and pepper to taste
On Cooking Day
  • 16 oz frozen peas

Instructions

To Assemble
  1. Add pork tenderloin to 9 x 13 baking dish sprayed with non stick spray.
  2. Chop sweet potatoes into small bite size pieces and onion into thin slices and sprinkle around pork.
  3. Drizzle with maple syrup and sprinkle with pepper. Cover with foil.
To Cook
  1. Bake covered in a 425 degree oven for 30 - 40 minutes or until pork is cooked through and potatoes are tender.
  2. Cook peas according to package directions.
