Ingredients

Prep
  • 1 deli rotisserie chicken
  • 8 oz cream cheese softened
  • 1/3 C sliced jalapenos
  • 1 t garlic powder
  • salt and pepper to taste
  • 1 t cumin
  • 1 1/2 C monterey jack cheese
  • 12 flour tortillas
On Cooking Day
  • 1 C sour cream
  • 1/2 T fresh lime juice
  • 1 t lime zest
  • 15 oz can pinto beans

Instructions

To Assemble
  1. Mix first 7 ingredients in bowl to make filling.
  2. Fill each tortilla with filling, then roll up and store in container with lid.
To Cook
  1. Spray taquitos with cooking spray.
  2. Put taquitos on baking sheet and bake at 425 for 12 minutes (flipping halfway through).
  3. Mix sour cream, lime juice, and lime zest together. This will be the dipping sauce.
  4. Heat pinto beans over stove top and serve with taquitos.
