Garlic Butter Salmon Broccoli - CE
rice and salad

Ingredients

Prep
  • 1/4 C butter
  • 1/3 C honey
  • 3 T minced garlic
  • 2 T lemon juice
  • 1 bunch parsley
  • salt and pepper to taste
  • 6 salmon fillets
  • 20 oz broccoli florets
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 6 C salad greens

Instructions

To Assemble
  1. Melt butter and mix with next 3 ingredients in a small bowl
  2. Chop parsley to equal 1/4 cup and add to butter.
  3. Chop salmon into bite size pieces and add to large zipper bag along with broccoli. Pour butter into bag. Zip and shake to mix.
To Cook
  1. Pour salmon and broccoli onto large baking sheet sprayed with non stick spray.
  2. Bake at 375 degrees for 18-25 minutes or until salmon is cooked through.
  3. Cook rice according to package directions. Serve with salad.
