Easy Breakfast Cookies - FF

Ingredients

Prep
  • 1/2 C cooked chopped bacon
  • 2 t dried onion flakes
  • 1/2 C frozen chopped bell pepper
  • 3/4 C flour
  • 1/2 salt and pepper to taste
  • 1 t baking powder
  • 4 eggs
  • 1 C shredded sharp Cheddar cheese
On Cooking Day
  • none

Instructions

To Assemble
  1. Add all ingredients except bacon to a large bowl with lid. Store bacon in small bag.
To Cook
  1. Add bacon to mixture and mix well. Using a large cookie scoop, scoop onto large baking sheet sprayed with non stick spray.
  2. Bake in a 375 degree oven for 10-12 minutes.
  3. Freeze on baking sheet (to prevent sticking when frozen) then place in large zipper bag.
  4. Reheat in microwave 1 minute or until warmed through.
