Crispy Baked Fish Tacos - CE

Ingredients

Prep
  • 1 1/2 lb cod filets or tilapia
  • 2 C Panko breadcrumbs
  • 1 T chili powder
  • 1/2 t cumin
  • 1/2 t garlic powder
  • 2 egg
  • 1 bag coleslaw mix
  • 1 C sour cream
  • 2 T lime juice
On Cooking Day
  • 12 corn tortillas
  • 15 oz can black beans
  • 2 avocados

Instructions

To Assemble
  1. Cut fish into bite-sized pieces.
  2. Add next 4 ingredients to bowl and mix.
  3. Crack eggs and add to a separate bowl and scramble together.
  4. Dip fish in egg, then breadcrumb mixture. Store in container with lid (use wax paper in between layers).
  5. Add remaining ingredients to large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Put fish (in single layer) on greased sheet pan. Lightly spray fish with cooking spray (to help crisp up while baking). Bake at 400 degrees for 10 minutes.
  2. Build tacos with corn tortillas, fish, prepared coleslaw, and avocado slices.
  3. Heat black beans according to package directions. Serve with tacos.
