Keto Instant Pot Chicken Bacon Chowder

Ingredients

Prep
  • 4 boneless chicken breasts medium size
  • 8 oz cream cheese
  • 4 t minced garlic
  • 1 C frozen chopped onion celery mix
  • 6 oz sliced mushrooms optional
  • 4 T butter
  • 1 t thyme
  • salt and pepper to taste
On Cooking Day
  • 3 C chicken broth
  • 1 C heavy cream
  • 1/2 pound cooked bacon or cook your own
  • 2 C fresh spinach
  • 1 loaf garlic bread

Instructions

To Assemble
  1. Cube chicken breasts and add to large zipper bag.
  2. Add remaining ingredients to chicken in zipper bag. Zip to seal.
To Cook
  1. Pour chicken mixture into slow cooker, add chicken broth and cook for 6-8 hours. If cream cheese is lumpy, use an immersion blender to smooth it out.
  2. Mix well then add spinach and cream. Cover and let sit for 10 minutes on high to wilt spinach. Top with chopped bacon.
  3. Serve with garlic bread.
