Ingredients

Prep
  • 2 lb large raw shrimp
  • 2 eggs
  • 2 C coconut flakes
  • 2 C panko bread crumbs
  • 1/2 t garlic powder
  • 1/2 C orange marmalade
  • 1/2 C Thai sweet chili sauce
On Cooking Day
  • 16 oz shredded coleslaw mix
  • 1 C can pineapple tidbits
  • 1/3 C sesame ginger dressing
  • 1/4 C fresh chopped cilantro

Instructions

To Assemble
  1. Beat egg and add to shallow dish.
  2. Add Panko bread crumbs, coconut, and garlic powder to large zipper bag.
  3. Dip shrimp in egg, then add to bag to coat with bread crumb mixture.
  4. Store shrimp in container with lid.
  5. Add last 2 ingredients to small bowl with lid.
To Cook
  1. Add shrimp to foil lined sheet pan sprayed with non-stick spray. For a crispier coating, spray shrimp with non-stick spray.
  2. Bake at 425 for 15-20 minutes.
  3. Toss slaw with sesame dressing, cilantro, and pineapple bits.
  4. Serve shrimp with prepped sauce.
