Sliced avocado & corn

Ingredients

Prep
  • 4 oz cream cheese
  • 2 C shredded cheddar cheese
  • 4 oz can diced green chilies
  • 12 corn tortillas
  • 10 oz can mild enchilada sauce
On Cooking Day
  • 2 avocados
  • 16 oz frozen corn

Instructions

To Assemble
  1. Mix first 3 ingredients in a small bowl with electric mixer.
  2. Scoop mixture onto tortillas and roll up.
  3. Place in 9x13 baking dish lined with foil and sprayed with non stick spray.
  4. Brush enchiladas with sauce. Reserve remaining sauce in small container with lid.
To Cook
  1. Pour remaining sauce over enchiladas and bake covered in a 375 degree oven for 25-30 minutes.
  2. Slice avocado and cook corn according to package directions.
