Black Bean Enchilada Casserole - C
Sliced avocado and green salad

Ingredients

Prep
  • 2 can black beans drained
  • 1 C mild salsa
  • 2 C shredded Mexican cheese blend
  • 28 oz mild red enchilada sauce 2 - 14 oz cans
  • 1 pkg corn tortillas 20 count
On Cooking Day
  • 2 avocados
  • 6 C salad greens

Instructions

To Assemble
  1. Add first 3 ingredients plus half of the enchilada sauce to a large bowl. Mix well.
  2. Pour half of the remaining sauce into a 9 x 13 baking dish sprayed with non stick spray.
  3. Layer casserole - tortillas (tear to fit) then bean mixture. Repeat until all ingredients are used ending with tortillas. You may not need all tortillas. Pour remaining sauce over top. Cover with foil.
To Cook
  1. Bake covered in a 450 degree oven for 30 - 40 minutes or until heated through.
  2. Serve with sliced avocado and green salad.
