Ingredients

Prep
  • 3 C cooked ground beef
  • 1 1/2 C shredded Mexican-style cheese
  • 12 corn tortillas
  • 10 oz can mild enchilada sauce
On Cooking Day
  • 1/2 C shredded Mexican-style cheese
  • 1 can refried beans
  • 16 oz frozen corn

Instructions

To Assemble
  1. Spread each tortilla with cooked ground beef and sprinkle with cheese. Don't overfill. Roll up and place seam side down in a 9x13 baking dish sprayed with non stick cooking spray.
  2. Lightly brush enchiladas with sauce. RESERVE remaining sauce in small container with lid. Sprinkle any remaining ground beef on top.
To Cook
  1. Pour remaining sauce over enchiladas, making sure each tortilla is coated with sauce. Sprinkle with cheese on top. Bake covered in a 375 degree oven for 25-30 minutes.
  2. Cook refried beans and corn according to package directions.
