Ingredients

Prep
  • 6 large baking potatoes
On Cooking Day
  • 16 oz cooked pulled pork
  • 1 C shredded cheddar cheese
  • 6 C salad greens

Instructions

To Assemble
  1. Wash and wrap each potato in foil and store in refrigerator until ready to cook.
To Cook
  1. Place potatoes in slow cooker on low for 6-8 hours.
  2. Warm BBQ meat according to package directions.
  3. Top each potato with BBQ and cheese.
  4. Serve with salad

For pulled pork, buy the ready made pulled pork in the refrigerated section, such as the Jack Daniel's brand. If you do not want to buy ready made BBQ meat, you can add frozen chicken breasts or beef and BBQ sauce in the slow cooker under the potatoes. Be sure to put a layer of foil between the chicken and potatoes.
