Ingredients

Prep
  • 1 1/2 lb boneless chicken breast
  • 1 C all purpose flour
  • 2 C panko bread crumbs
  • salt and pepper to taste
  • 2 egg
  • 1 C BBQ sauce
  • 1/3 C brown sugar
  • 2 T lime juice
On Cooking Day
  • 12 flour tortillas
  • 1/4 ranch dressing
  • 12 oz coleslaw mix
  • 15 oz can black beans

Instructions

To Assemble
  1. Cut chicken into bite-sized pieces. Place in large zipper bag and add flour. Toss around to coat.
  2. Add egg to bowl and beat. Add panko and salt and pepper to separate bowl.
  3. Dip chicken in egg, then coat with panko. Store in bag or container with lid.
  4. Add remaining ingredients to small bowl with lid.
To Cook
  1. Spread chicken onto greased sheet pan (in single layer). Spray chicken with non-stick spray.
  2. Bake at 425 for about 20 minutes.
  3. Toss chicken with prepared sauce.
  4. Build tacos with chicken, slaw mix, and ranch dressing drizzled on top.
  5. Heat beans and serve alongside tacos.
