Green beans and carrots

Ingredients

Prep
  • 6 tilapia fillets or any white fish
  • 3 T butter
  • 3 T lemon juice
  • 1 t garlic powder
  • 1/2 t dried oregano
  • 1/2 t ground paprika
  • 2 T capers optional
On Cooking Day
  • 16 oz frozen green beans
  • 16 oz frozen carrots

Instructions

To Assemble
  1. Spray a 9 x 13 baking dish with non stick spray and place tilapia fillets in the dish.
  2. Melt butter in small bowl in microwave. Add next 4 ingredients to the butter and brush over each fillet.
  3. Sprinkle with capers. (if using)
  4. Cover with plastic wrap
To Cook
  1. Uncover and bake in 425 degree oven for 15 minutes or until fish flakes easily with fork.
  2. Cook green beans and carrots according to package directions.

* Substitute any white fish in place of Tilapia.
* Non seafood eaters, substitute with chicken breasts or steak.  May require longer cook time.
