Ingredients

Prep
  • 3 C oats
  • 1/2 C brown sugar
  • 2 t cinnamon
  • 2 t baking powder
  • 1 t salt
  • 3/4 C chocolate chips optional
  • 2 eggs
  • 1 C milk
  • 1/4 C butter
  • C applesauce unsweetened
  • 2 t vanilla
On Cooking Day
  • none

Instructions

To Assemble
  1. In large bowl combine first 6 ingredients (5 if not using raisins).
  2. In a separate bowl, combine next 5 ingredients.
  3. Add wet ingredients to the dry ingredients and mix well.
To Cook
  1. Preheat oven to 350 degrees.
  2. Spoon into paper lined muffin tin, and Bake 30 minutes, or until golden brown on top.
  3. Once muffins cool, store in large container with lid in the refrigerator. When ready to eat, heat muffins in microwave if desired (or eat them cold).
