Baked Monterey Chicken - C

Ingredients

Prep
  • 6 chicken breast cutlets
  • 1 C barbecue sauce
  • 1/2 t garlic powder
  • salt and pepper to taste
  • 6 slices cooked bacon crumbled
  • 1/2 C shredded cheddar cheese
  • 1/2 C shredded Monterrey jack cheese
On Cooking Day
  • 1 C diced tomatoes
  • 1/2 C chopped green onions
  • 1/2 C barbecue sauce
  • 2 bags frozen rice steamers
  • 8 C salad greens

Instructions

To Assemble
  1. Add first four ingredients to large zipper bag. Zip to seal and shake to mix.
  2. Mix last three ingredients in a bowl with a lid.
To Cook
  1. Place chicken mixture on a large baking sheet sprayed with non-stick cooking spray. Bake at 400 for 20-25 minutes until cooked (depending how thick the chicken cutlets are).
  2. Sprinkle cheese and bacon onto chicken. Return to the oven for 4-5 minutes to melt the cheese.
  3. Top chicken with diced tomatoes, green onion and bbq sauce.
  4. Serve on top of rice with a salad.
