Baked Fish Sticks with Coleslaw - CE

Ingredients

Prep
  • 2 lbs cod
  • 1/3 C butter
  • 1 t paprika
  • salt and pepper to taste
  • 2 C panko bread crumbs
  • 1 bag coleslaw mix
  • 3/4 C plain Greek yogurt
  • 2 t lime juice
  • 2 t red wine vinegar
  • 1 T honey
On Cooking Day
  • 1/2 C malt vinegar for dipping
  • 12 oz frozen cut okra

Instructions

To Assemble
  1. Cut fish into 3-inch strips. Melt butter and spread over fish.
  2. Combine next 3 ingredients into a shallow dish. Coat fish with bread crumb mixture and store in casserole dish with lid.
  3. Combine remaining ingredients in large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Place fish on baking sheet sprayed with non-stick spray. Spray fish with non-stick spray or olive oil spray for a crispier coating.
  2. Bake at 425 degrees for 20-25 minutes (or until fish is flaky).
  3. Cook okra according to package directions.
  4. Use malt vinegar for dipping fish and serve with coleslaw and okra.
