Baked Enchilada Meatballs - C
avocado, salad, chips and salsa

Ingredients

Prep
  • 1 1/2 lb meatballs
  • 20 oz enchilada sauce
  • 2 C shredded Monterrey jack cheese
  • 1/3 C cilantro
On Cooking Day
  • 2 avocados
  • 8 C salad greens
  • 1 bag tortilla chips
  • 1/2 C salsa

Instructions

To Assemble
  1. Pour meatballs into large baking dish.
  2. Pour enchilada sauce over top and mix well. Top with cheese and chopped cilantro. Cover with foil.
To Cook
  1. *frozen meatballs will require longer cook time.
  2. Bake covered in a 400 degree oven for 20 minutes or until hot and bubbly.
  3. Serve with salad, avocado, chips and salsa.
