Baked Creamy Cajun Chicken - C

Ingredients

Prep
  • 6 boneless chicken breasts thin cut
  • 1/2 t garlic powder
  • 1/2 t salt
  • 1/4 t pepper
  • 8 oz cream cheese softened
  • 1/2 C sour cream
  • 1 T Cajun seasoning
  • 1 bell pepper any color
  • 1 small onion
  • 1 C shredded Mexican-style cheese
  • 1 green onion
On Cooking Day
  • 1 pkg dinner rolls
  • 10 C salad greens

Instructions

To Assemble
  1. Place chicken breasts in 9x13 baking dish sprayed with non stick spray and season with garlic powder, salt and pepper.
  2. In a small bowl mix together cream cheese, sour cream and cajun seasoning.
  3. Spread cream cheese mixture on top of chicken. Sprinkle bell pepper and onion on top. Top with shredded cheese. Cover with foil. Chop green onion and place in a small container with a lid.
To Cook
  1. Bake chicken loosely covered in a 400 degree oven for 30-35 minutes until chicken is cooked thoroughly. Sprinkle with green onion before serving.
  2. Serve with salad and dinner rolls.
