Bacon Wrapped Cream Cheese Stuffed Chicken - C
Broccoli & rice

Ingredients

Prep
  • 6 boneless chicken breasts
  • 1/2 t garlic powder
  • salt and pepper to taste
  • 8 oz whipped chive cream cheese
  • 1/2 C Italian shredded cheese
  • 6 slices bacon
  • 6 wooden toothpick
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 16 oz frozen broccoli and cauliflower blend

Instructions

To Assemble
  1. Lay chicken out between sheets of wax paper and flatten with a rolling pin or mallet. Season chicken with next 2 ingredients.
  2. Spread a thin layer of cream cheese onto each chicken breast and sprinkle with shredded cheese.
  3. Roll chicken up and wrap one slice of bacon around each. Secure with toothpick.
  4. Place seam side down in baking dish sprayed with non stick spray and cover.
To Cook
  1. Bake uncovered at 400 degrees for 30 min. For crispy bacon, place chicken under broiler for a few minutes.
  2. Cook rice and broccoli according to package directions.
