Almond Crusted Chicken - C
Green salad and sugar snap peas

Ingredients

Prep
  • 3 egg
  • 1/2 C water
  • 2 T lite soy sauce
  • 1 1/2 C sliced almonds thinly
  • 6 boneless chicken breasts
On Cooking Day
  • 16 oz frozen sugar snap peas
  • 6 C salad greens

Instructions

To Assemble
  1. Mix first 3 ingredients in a shallow bowl.
  2. Gently smash almonds inside package to break into smaller pieces. (crush with bottom of can or rolling pin) Pour onto a paper plate.
  3. Use tongs to dip the top side of each chicken breast into egg mixture then almonds.
  4. Store in large container with lid (almond side up). Use wax paper between layers.
To Cook
  1. Place chicken (almond side up) on large baking sheet sprayed with non stick spray.
  2. Bake at 400 degrees for 25 - 35 minutes or until chicken is cooked through.
  3. Cook sugar snap peas according to package directions and serve with green salad.
